Buncha Veggies Raw Soup

Hey Worlds,

Got a blender? Got a buncha veggies? Let's do this.

Your base:
1/2 garlic clove + 1/2 onion + 3 or 4 mushrooms (in the spring you'll trade the mushrooms for an avocado)

Your veggies:
Any veggie or greens in your fridge will do. This time I used: beet + zucchini + tomato + frozen leafy greens. Another time I used: sweet potato + carrot + celery. Yum!

Bonus, if you have it:
Cooked lentils or chickpeas or beans, 1 tbsp apple cider vinegar, fresh herbs, coconut milk, nutritional yeast, etc... be creative!

1 - boil some water in the kettle
2 - chop all base and veggies in big chunks and put them in the blender with bonus ingredients (you don't have to peel anything! Keep the skin even on sweet potatoes or beets, they're full of nutrients - just wash them very well)
3 - add a little boiling water (start with about 1 cup, add more if you want)
4 - blend, then use higher speeds until you like the texture

Add some salt and pepper, et voilà!
If it's not warm enough, add some boiling water or reheat in a saucepan. You can also let it cook a bit if you prefer, it will bring different flavours (but a little less vitamins) and will be super tasty as well. I love it both ways.

Enjoy and let me know what you think!
